Freezer Tray Herbs

Have an abundance of fresh herbs?  Preserve them in oil and freeze them!

This method works well for thyme, sage, oregano, basil and cilantro.

The easiest way to do this is to use ice cube trays. Put even amounts of diced herbs into each ice cube tray slot and cover with extra virgin olive oil (about halfway up the container).

Place your trays into your freezer and allow them to fully freeze. Once frozen, they can be stored in the ice cube tray or in a different freezer-safe bag or container. Then, when needed, a cube or two can be taken out to use for your recipe.
